The salami represent a new part of the company which Renato has become fond of especially after taking courses in Moretta at the Agenform, after having listened to the advice given by veterans in this sector and after many trials.
The opening of the store coincided with the first raw and cooked salami which he made by fully respecting the tradition and the naturalness of the product.
The production is not just limited to raw and cooked salami, it also offers seasoned coppa, Lonzardo, bresaola and fresh sausage.
Initially, the meat was purchased. Now however the Cascina Valeggia uses a plot of land for breeding its own pigs.
